Ingredients:
- 3 to 4-pound pork shoulder
- 1/4 cup Spice Rack Co's Jamaican Jerk seasoning
- 1 onion, sliced
- 4 garlic cloves, minced
- 1 cup of chicken stock or water
- 1 tablespoon of soy sauce
- 1 tablespoon of apple cider vinegar
- 1 orange or lime, juiced
Instructions:
- Rub the pork shoulder all over with the Jamaican Jerk seasoning.
- In a large slow cooker, place the sliced onion and minced garlic at the bottom.
- Place the seasoned pork shoulder on top of the onions and garlic.
- In a bowl, whisk together the chicken stock, soy sauce, apple cider vinegar, and citrus juice, then pour the mixture over the pork.
- Set the slow cooker to low and cook for 8 hours or until the pork is tender and shreds easily with a fork.
- Shred the pork inside the slow cooker and mix with the juices.
- Serve the jerk pork in warm tortillas for tacos or with a side of roasted sweet potatoes and a simple slaw.
