Slow-Cooked Jerk Pork Shoulder

Ingredients:

  • 3 to 4-pound pork shoulder
  • 1/4 cup Spice Rack Co's Jamaican Jerk seasoning
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 cup of chicken stock or water
  • 1 tablespoon of soy sauce
  • 1 tablespoon of apple cider vinegar
  • 1 orange or lime, juiced

Instructions:

  1. Rub the pork shoulder all over with the Jamaican Jerk seasoning.
  2. In a large slow cooker, place the sliced onion and minced garlic at the bottom.
  3. Place the seasoned pork shoulder on top of the onions and garlic.
  4. In a bowl, whisk together the chicken stock, soy sauce, apple cider vinegar, and citrus juice, then pour the mixture over the pork.
  5. Set the slow cooker to low and cook for 8 hours or until the pork is tender and shreds easily with a fork.
  6. Shred the pork inside the slow cooker and mix with the juices.
  7. Serve the jerk pork in warm tortillas for tacos or with a side of roasted sweet potatoes and a simple slaw.
