Jerk Shrimp Skewers

Ingredients:

  • 1 pound of large shrimp, peeled and deveined
  • 3 tablespoons of Spice Rack Co's Jamaican Jerk seasoning
  • 1 tablespoon of olive oil
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 large onion, cut into chunks
  • Skewers (soaked in water if wooden)

Instructions:

  1. In a large bowl, toss the shrimp with the Jamaican Jerk seasoning and olive oil until well coated.
  2. Thread the shrimp and chunks of bell pepper and onion onto the skewers.
  3. Heat your grill or grill pan to medium-high heat.
  4. Grill the skewers for 2-3 minutes per side or until the shrimp are opaque and cooked through.
  5. Serve the skewers over a bed of coconut rice or alongside a tropical fruit salsa.
