Ingredients:
- 1 pound of large shrimp, peeled and deveined
- 3 tablespoons of Spice Rack Co's Jamaican Jerk seasoning
- 1 tablespoon of olive oil
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 large onion, cut into chunks
- Skewers (soaked in water if wooden)
Instructions:
- In a large bowl, toss the shrimp with the Jamaican Jerk seasoning and olive oil until well coated.
- Thread the shrimp and chunks of bell pepper and onion onto the skewers.
- Heat your grill or grill pan to medium-high heat.
- Grill the skewers for 2-3 minutes per side or until the shrimp are opaque and cooked through.
- Serve the skewers over a bed of coconut rice or alongside a tropical fruit salsa.
