Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons Spice Rack Co's Cajun Creole seasoning
- 1 tablespoon olive oil or melted butter
- 1 lemon, halved
- 3 garlic cloves
- Fresh thyme sprigs
Instructions:
- Preheat your oven to 425°F (220°C).
- Rinse the chicken and pat dry with paper towels.
- Rub the outside and cavity of the chicken with olive oil or melted butter.
- Season the chicken liberally with the Cajun Creole seasoning, inside and out.
- Stuff the cavity with the lemon halves, garlic cloves, and a few sprigs of thyme.
- Place the chicken in a roasting pan and tie the legs together with kitchen twine.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear and a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
- Serve with roasted potatoes and a side of sautéed green beans.
