Creole Cajun Roast Chicken

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons Spice Rack Co's Cajun Creole seasoning
  • 1 tablespoon olive oil or melted butter
  • 1 lemon, halved
  • 3 garlic cloves
  • Fresh thyme sprigs

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken and pat dry with paper towels.
  3. Rub the outside and cavity of the chicken with olive oil or melted butter.
  4. Season the chicken liberally with the Cajun Creole seasoning, inside and out.
  5. Stuff the cavity with the lemon halves, garlic cloves, and a few sprigs of thyme.
  6. Place the chicken in a roasting pan and tie the legs together with kitchen twine.
  7. Roast in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear and a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  8. Let the chicken rest for 10 minutes before carving.
  9. Serve with roasted potatoes and a side of sautéed green beans.
