Blackened Cajun Fish

Ingredients:

  • 4 firm white fish fillets, like cod or tilapia
  • 2 tablespoons Spice Rack Co's Cajun Creole seasoning
  • 2 tablespoons unsalted butter, melted
  • Lemon wedges for serving
  • Fresh parsley, chopped for garnish

Instructions:

  1. Pat the fish fillets dry with paper towels. Brush each fillet with melted butter.
  2. Sprinkle the Cajun Creole seasoning generously on both sides of the fish fillets.
  3. Heat a cast iron skillet over high heat until very hot.
  4. Add the fish fillets to the skillet without crowding them and cook for 2-3 minutes on each side, or until the outside is charred and the inside is cooked through.
  5. Serve immediately with lemon wedges and garnish with fresh parsley.
  6. Accompany with steamed vegetables or a crisp green salad.
