Ingredients:
- 4 large bell peppers, tops cut away and seeds removed
- 1 pound ground beef
- 2 tablespoons Spice Rack Co's Better Burger seasoning
- 1 cup cooked rice or quinoa
- 1 (15 oz) can of diced tomatoes, drained
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the onion and garlic until softened.
- Add the ground beef and cook until browned. Drain any excess fat.
- Stir in the Better Burger seasoning, cooked rice or quinoa, and diced tomatoes. Cook for a few minutes until everything is heated through.
- Season the mixture with salt and pepper to taste.
- Spoon the beef mixture into the hollowed-out bell peppers, and place them in a baking dish.
- Top each pepper with a generous sprinkle of shredded cheese.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
