Better Burger Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, tops cut away and seeds removed
  • 1 pound ground beef
  • 2 tablespoons Spice Rack Co's Better Burger seasoning
  • 1 cup cooked rice or quinoa
  • 1 (15 oz) can of diced tomatoes, drained
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the onion and garlic until softened.
  3. Add the ground beef and cook until browned. Drain any excess fat.
  4. Stir in the Better Burger seasoning, cooked rice or quinoa, and diced tomatoes. Cook for a few minutes until everything is heated through.
  5. Season the mixture with salt and pepper to taste.
  6. Spoon the beef mixture into the hollowed-out bell peppers, and place them in a baking dish.
  7. Top each pepper with a generous sprinkle of shredded cheese.
  8. Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the cheese is bubbly and golden.
  9. Garnish with fresh parsley before serving.
