Authentic Jamaican Jerk Chicken

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 4 tablespoons of Spice Rack Co's Jamaican Jerk seasoning
  • 1 tablespoon of olive oil or melted coconut oil
  • 1 lime, cut into wedges (for serving)
  • Fresh cilantro (for garnish)

Instructions:

  1. Rinse the chicken thighs and pat them dry with paper towels.
  2. Rub each chicken thigh with the Jamaican Jerk seasoning, making sure to get the seasoning under the skin as well.
  3. Drizzle the olive or coconut oil over the seasoned chicken to help the rub adhere and to add moisture.
  4. Marinate the chicken in the refrigerator for at least 2 hours, or ideally overnight, for the flavors to penetrate deeply.
  5. Preheat your grill to medium-high heat.
  6. Grill the chicken thighs skin-side down for about 5-7 minutes until the skin is crisp and charred.
  7. Flip the chicken and continue grilling for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Rest the chicken for a few minutes, then serve with lime wedges and garnish with fresh cilantro. Accompany with rice and peas, or a fresh mango salad.
