Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 4 tablespoons of Spice Rack Co's Jamaican Jerk seasoning
- 1 tablespoon of olive oil or melted coconut oil
- 1 lime, cut into wedges (for serving)
- Fresh cilantro (for garnish)
Instructions:
- Rinse the chicken thighs and pat them dry with paper towels.
- Rub each chicken thigh with the Jamaican Jerk seasoning, making sure to get the seasoning under the skin as well.
- Drizzle the olive or coconut oil over the seasoned chicken to help the rub adhere and to add moisture.
- Marinate the chicken in the refrigerator for at least 2 hours, or ideally overnight, for the flavors to penetrate deeply.
- Preheat your grill to medium-high heat.
- Grill the chicken thighs skin-side down for about 5-7 minutes until the skin is crisp and charred.
- Flip the chicken and continue grilling for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C).
- Rest the chicken for a few minutes, then serve with lime wedges and garnish with fresh cilantro. Accompany with rice and peas, or a fresh mango salad.
